"The 2019 Savigny-lès-Beaune Les Lavières 1er Cru, grown on 30–50cm of alluvial soil over stratified hard limestone subsoil and matured in around 35% new oak, is blessed with an engaging, pure bouquet of red currant and cranberry jus, a palpable sense of minerality coming through. The palate is medium-bodied with supple tannins and vibrant red berry fruit, the 60-year-old vines imparting wonderful complexity on the finish. The fame of Pommard in the 19th century earned it the image of a wine that is both forceful and virile. In reality, time, terroir and methods of vinification of Domaine GERMAIN have all combined to create a more subtle reality, a wine that is both richer and more sensitive. Its colour is the deep, dark red with mauve highlights. Its aromas are redolent of blackberry, bilberry, or gooseberry, cherry pit and ripe plum. Often, wild and feline notes develop with age. At full maturity, it tends towards leather, chocolate and pepper. It needs to be given time to open up to its fullest extent and to display its mouth-filling texture, its firm but delicate structure, its fruit-filled mouth, and its chewy tannins, which by then will be properly smoothed down.
From a 0.96 hectare parcel in the village of Chassagne, both the Santenay and Puligny sides, planted in 1988, 2001, and 2012. Aged in 10 months in 228 and 350 L oak barrels, 25% new. Unfiltered.

Monthelie Blanc 'Les Sous Roches' Soil: Oxford white marl. The extremely draining nature of the soil, combined with the repeated climatic incidents that this area has experienced for several years has made the production of this wine long and complicated. Exposition: East. The vines are planted on a very steep slope beneath a rock bank (“Les Sous Roches”). This dominant position offers a magnificent view of the vineyards of Monthélie, Meursault, and the Bresse plain. First Planting: In 2012 from massive selections of Chardonnays and qualitative clones. Plant Density: 11,000 vines/ha Harvest: Very small first harvest in 2017 (10 hl / ha), 6 years after planting. Vinification: Pneumatic pressing of the whole harvest. Natural yeasts. Alcoholic (11 months) and malolactic fermentation in barrels (30% new). Light fining and filtration on pure cellulose plates. Tasting Notes: Pure with little sulfur. Dry, clear, & precise character. Subtle fruit, prominent mineral flavors, and firm acidity.
