"This is a Chablis to serve at a slightly warmer temperature as it really opened up over the hour it sat in the glass. Its initially floral aromas add a lightly earthy and chalky note as the wine warms. Pomelo, yellow current and white raspberries all surface, too. "Lovely density and richness, with a nose showing ripe apricots, a hint of lemon peel and just a bit of butter. The texture is creamy and dense but not lacking in tension. Regal, substantial, but always elegant. This is made with the white grapes from the Senard monopole of the Clos des Meix, now biodynamically farmed. It is a blend of 85% Chardonnay and 15% Pinot Beurrot (Pinot Gris). The wine is rather quickly pressed and vinified without sulphur until the malolactic fermentation is complete. Ageing is in 350-litre casks (half new)." - 96pts, Charles Curtis MW
