The bouquet is less complex than his Moulin-à-Vent’s but more direct, bursting with scents of Griotte cherries, rose petals and raspberries. But on the palate, the wine is if anything more reserved, revealing an immensely concentrated and seemingly infinitely layered core of lively fruit, velvety tannins and lively structuring acids, concluding with a sapid and thrillingly floral finish. Named after François' father, Cuvee Paul is an incredibly rare wine made from La Grande Côte and set aside as having the greatest potential for ageing. It is not made every year. A hark back to how Chavignol was made in the 40's and 50's it is made from very ripe grapes and shows gentle sweetness and incredible power.

Nofining, no filtration, no sulfur...just pure chenin! ---- A complex and powerful Chenin with real energy and focus. Matris means "mother" in latin -- a lovely nod to the pedigree of the Chenin grape in Orthogneiss terroirs. Don't sleep on this wine as it won't stick around for long! ---- "The 2018 Chenin Blanc Matris emerges from relatively young Chenin Blanc vines, planted in 2014. It was fermented in underground concrete tanks and aged 10 to 12 months in amphora. The nose is a tropical bounty. In the mouth, there’s pineapple and more pineapple: fresh, then baked, then grilled, then dipped in soy sauce. All balanced by cool minerality and a bit saline at the finish.
