Sourced from the Hautes Cotes de Beaune, the area on the top of Cote d'Or escarpment, and the adjacent valleys and slopes. This 1.5 hectares vineyard is situated 5 kilometers west of Meursault in the communes of Orche and Baubigny. Vine age is 15-40 years old. A lovely and refeshing Hautes Cotes de Beaune highlighted by aromas of raspberry and cassis, along with a delicate spice. Pierre Boisson is drawn to the "mountain" terroirs of Auxey and the Hautes Cotes de Beaune, for both their stony terroirs and lower temperatures.

"The 2019 Savigny-lès-Beaune Les Lavières 1er Cru, grown on 30–50cm of alluvial soil over stratified hard limestone subsoil and matured in around 35% new oak, is blessed with an engaging, pure bouquet of red currant and cranberry jus, a palpable sense of minerality coming through. The palate is medium-bodied with supple tannins and vibrant red berry fruit, the 60-year-old vines imparting wonderful complexity on the finish. 2019 Monthelie Blanc 'Les Sous Roches'
Monthelie Blanc 'Les Sous Roches' Soil: Oxford white marl. The extremely draining nature of the soil, combined with the repeated climatic incidents that this area has experienced for several years has made the production of this wine long and complicated. Exposition: East. The vines are planted on a very steep slope beneath a rock bank (“Les Sous Roches”). This dominant position offers a magnificent view of the vineyards of Monthélie, Meursault, and the Bresse plain. First Planting: In 2012 from massive selections of Chardonnays and qualitative clones. Plant Density: 11,000 vines/ha Harvest: Very small first harvest in 2017 (10 hl / ha), 6 years after planting. Vinification: Pneumatic pressing of the whole harvest. Natural yeasts. Alcoholic (11 months) and malolactic fermentation in barrels (30% new). Light fining and filtration on pure cellulose plates. Tasting Notes: Pure with little sulfur. Dry, clear, & precise character. Subtle fruit, prominent mineral flavors, and firm acidity.
